Italian Roast Beef Sandwhich
Our House-made Italian Roast Beef is first dry rubbed with a mixture of herbs and spices and then slow roasted to the perfect temperature which has the beef almost melting in your mouth. The roast beef is paired with Parmigiano Reggiano cheese and topped with arugula, EVOO and balsamic glaze.
Housemade Ham and Cheese
We make our own ham from our own locally raised pigs. It's brined, smoked and baked for a delicious moist and flavorful ham. The sandwich is usually on Pan'e Dolcetti focaccia, a semi soft cheese such as Italian Bel Paese with seasonable greens and EVOO and Balsamic glaze make this classic even more extraordinary.
Italian Beef Sandwich
More appropriately, Chicago Italian Beef sandwich, out of the immigrants working in the Chicago stockyards came this seasoned meat roasted over water so that a rich broth is created. The meat is then sliced very thinly, warmed in this rich broth and layered into a french roll which can hold its form (Pan'e Dolcetti's is perfect). It is garnished with Chicago style giardiniera or sweet peppers.
Prosciutto & Mozzarella Sandwich
Prosciutto di Parma, which is some of the best prosciutto in the world, comes from the Parma region in Italy and the pigs are fed the whey from the Parmigiano Reggiano cheese making process. This makes for a deliciously cured ham! It's paired with fresh mozzarella and topped with balsamic glaze.
Pulled Pork Sandwich
Our Pulled Pork is some of the best around! We use our locally sourced pork, and dry rub it with a mixture of spices. We then short smoke it and slow roast it overnight which gives it an amazing flavor! It's served on a Pugliese roll to soak up the juices.
Italian Roast Beef
Inspired by Italian Beef from Chicago, our roast beef is rubbed with seasoning such as garlic, herbs (much of them coming from Mountain View Farm here in Easthampton) then slow roasted over water carrots and celery. This creates a meaty broth, which we use in our Italian Beef sandwiches, as well as maintain a moist juicy roast beef. Once you try this you may never go back to deli meat again!
Our Smoked Sausage
For each of our sausages, there is a smoked version. This allows you to enjoy a third dimension of flavor to an already complex depth of goodness found in our sausage. Use our smoked hot sausage, for example, anywhere you would use andouille or chorizo.
